My advice? Get the legal part done in your state a few days before you leave or when you return.
Getting married in Santorini requires you to translate and notarise many documents into Greek, and then the finished marriage documents back into English. It is a little bit tricky!
But if you want this part of your wedding to bear the Santorini trademark, here’s your quick checklist:

Oia’s Blue Domes: This is the classic Santorini shot. Be prepared to wake up at dawn to beat the crowds. You will also only have 5 minutes to take some portraits before it is the next person’s turn, as stipulated by signs nearby.
Skaros Rock: For the adventurous couple. The quick hike is worth it for the panoramic views. It is only steep on the way back when you go back up the stairs.
Red Beach: Add a pop of colour to your wedding album with this striking backdrop. But then again, sunrise is the right move for this location, as it gets packed quickly.
Pyrgos Village: For a taste of traditional Santorini away from the tourist crowds. Picture quaint and narrow streets, with castle ruins and some grandiose buildings as well.

Get travel health insurance—I usually use AMA; they are affordable and easy.
Tax can be pretty hefty when securing deposits and paying for everything. The standard VAT rate in Greece is 24%. As a non-EU resident, you can receive a VAT refund of approximately 12.5% to 14.75% on products subject to this standard rate. Keep your receipts and you can get a refund at the airport!
Remember, tap water isn’t drinkable on most Greek islands. Stick to bottled water.
